This port-like icewine has a velvety texture and wonderfully balanced acidity. Hazelnut, dried cherry and butterscotch come through and linger on the palate.
The Zweigelt Icewine grapes were grown in Westbank in certified organic vineyards: Kalala vineyard and Paynter Family vineyard. Picking started for this long-hanging fruit on January 12 at 4:00 am when the temperature dropped to -9 degrees and got progressively colder through picking.
This small batch of Zweigelt icewines was fermented slowly over a three month period using a specially selected yeast called 2 TD. The grapes came into the winery at a well balanced 38.5 Brix level.
