Description
Aromas of vanilla, clove, licorice, and mushroom. Flavours of cranberry, cherry, and raspberry. Has soft tannins and a long-lasting finish. It is light enough for salmon but complex enough to hold up to some richer meat including roast duck.
Growing conditions
These delicate Pinot Noir grapes were lovingly grown in the organic Longview Vineyard on the Naramata Bench. Careful pruning methods were used to ensure the grapes weren’t damaged from the sun but were able to achieve the ripeness required for this elegant wine.
Winemaking notes
Traditionally our Pinot Noir comes from Longview Vineyard, Naramata BC. Early harvest on September 30 at 23 Brix. Excellent, dense clusters, the clone has a higher pigment concentration.
72 hours of cold soak to achieve ample colour extraction. Fermented at an average temp of 18.5° C for 13 days. Aged for 12 months in Odysé (American oak) barrels.
