Aromas of blackberry, plum, and black cherry. The nuanced flavors offer milk chocolate, cocoa powder, violet flowers, leather, with a sweet tobacco and soft oak finish. Great with dark meat poultry, lean red meat and rich soft to semi-firm cheeses
Malbec was grown in the hot Similkameen at Mariposa vineyard.
Harvested at its peak, towards the end of October, the acid/sugar/pH balance was ideal. The grapes were crushed and cold soaked for 72 hours for optimal flavour and colour extraction. Fermentation was kept around 27°C and has taken about 2 week and the wine was aged for 3 years in French and American barrels.
