Herbaceous aromas like gooseberry and grass. Flavours of lime, green apple, and flowery white peach. Pair with strong goat cheese or salads especially if they contain seafood and/or ‘grassy’ ingredients such as asparagus, pea-shoots, green peppers, and herbs.
Sauvigonon Blanc came form Chandra certified organic vineyard from 20 year old vines. The vineyard located in fairview area of Oliver has a south-eastern exposure, which is ideal to grow excellent fruit.
Picked on October 9, 2017, when the grapes were ripe and tropical. Slow, low temperature fermentation for about 30 days. Gravity clarified and kept in 2 year old American oak barrels for 21 days to enhance mouth-feel and overall aromas & flavours.
